This is such an easy recipe using simple ingredients that you can adapt for many different fruits.
600 Grams Fresh Pitted Cherries (Stems Removed Too)
3 Large Fresh Eggs
75 Grams All Purpose Flour
125 Grams White Sugar
325 ml of Whole Milk
1 tsp Vanilla
Teeny Splash of Almond Extract
Zest of 1 Orange
Butter for the Baking Dish
Preheat your oven to 375F. Fully coat the base and sides of a shall baking dish, round casserole or cast iron skillet with softened butter. Set aside.
Place your pitted cherries in the bottom of the dish/pan. Keep some whole and slice others if you like.
In a blender add the eggs, flour, sugar, milk, vanilla, almond and orange zest. Blend until very smooth.
Pour the batter over the cherries. Jiggle the dish/pan to evenly distribute.
Bake in the oven for approximately 40-45 minutes, until the batter is just set - a little wiggle in the centre is okay.
Dust with confectioners sugar and enjoy warm or at room temperature.
