cherry Granita

Serves 4

You can make this refreshing treat with pure cherry juice from a bottle or take the extra time to blend fresh cherries. If you opt for the blended version the texture will be a little thicker but just as delicious. I have provided the recipe for the blended fruit version.

300 grams Fresh Pitted Cherries (Stems Removed)

125 ml Cold Water

125 ml Galliano (Optional - Use 125 ml more of water if preferred)

3 Tbsp Super Fine Sugar or Honey (Adjust depending on the sweetness of the cherries)

Blend all of the ingredients together until smooth. Pour into a shallow glass or ceramic baking dish.

Gently place in the freezer - ensure its level.

In thirty minute intervals, remove the granita from the freezer and use a fork to scrape the mixture - breaking up flakes of ice and little lumps. Return the dish to the freezer each time. Continue this process for 2-2.5 hours until there is no remaining liquid and you are left with pink fluffy icy crystals.

Serve cold as is or add a splash of heavy cream on top.
