Serve 4 People
1lb Fresh Fava Beans - Shelled, Skinned and Halved
2 Heads of Baby Gem Lettuce - Outer Leaves Removed, Halved Lengthwise and Chopped
100-125 Grams Flat Pancetta - Cut into Small Cubes
1 Tbsp Olive Oil
Freshly Ground Black Pepper
60 Grams Pecorino Cheese - Finely Grated
60 Grams Unsalted Butter
1 Package (500 Grams) of Best Quality Dry Pasta - Torchietti or Similar Short Shape
Bring a large pot of water to the boil, season with salt. Drop your pasta and cook for 12-15 minutes while you prepare the other ingredients.
Heat a large pan over medium high heat. Add olive oil and the cubed pancetta. Cook for 6-8 minutes until golden brown and crispy. Add in the fava beans and the chopped baby gem. Stir to combine and cook for 5-7 minutes more. Season with pepper.
Add your cooked pasta to the pan along with a little of the pasta water. Remove from the heat and add the pecorino and butter. Toss to combine.
Serve with a fresh grating of pecorino.
