Pain Perdu
Serves 4-6
1 Large Challah (or Brioche)
5 Large Fresh Eggs
1.5 Cups Whole Milk
1 tsp Cinnamon
1 tsp Vanilla Bean Paste
2 tsp Grated Orange Zest
Juice of Half an Orange
1/2 tsp Orange Blossom Extract or Sicilian Orange Essense (Optional)
Pinch of Salt
3 Tbsp Unsalted Butter
Fresh Strawberries
Maple Syrup
Slice the challah into 8-10 slices, depending on how thick you like it and how many people you are serving. Set aside.
In a large shallow bowl, whisk the eggs, milk, cinnamon, vanilla, zest, juice, orange essence and salt together until well combined.
In a large skillet, heat the butter over medium high heat until the butter has melted and is starting to foam. Dip each slice of challah into the egg mixture - soak for 2-3 seconds each side and place in the hot skillet. Cook each side until golden brown. Continue with remaining slices (you will likely need to do in batches depending on the size of your skillet - keep the cooked pieces warm in a low oven).
Serve with freshly sliced strawberries and warm maple syrup.
