Frittata alle Erbe
Serve 6
Olive Oil
12 Large Eggs
Salt and Pepper
80 Grams Parmigiano
Handful Chopped Mixed Fresh Herbs - Basil, Marjoram, Parsley, Tarragon, Sage - Whatever you Like!
In a large bowl whisk together the eggs, salt, pepper, parmigiano and chopped herbs. Whisk until lightened and airy.
Preheat oven to 350F.
Heat a 8-9 inch skillet over medium low heat. Add in 2 tablespoons of oil.
Pour in the egg mixture and using a spatula gently pull the eggs from the side of the pan, moving the mixture around but not stirring it. Once the base is just set but the top is still wet place in the oven to finish cooking and puff up, about 4-6 minutes.
Serve immediately or allow to cool to room temperature (more traditional). Serve with crusty bread and a nice piece of fresh mozzarella and sliced tomatoes with flakey salt.
